Job Description:

Cut, trim, bone and otherwise prepare custom and/or standard cuts of meat, poultry for sale at self-serve counters or according to customers' orders
Prepare meat for special orders, displays and/or delivery
Shape, lace and tie roasts and other meats, poultry, may wrap or package fresh or frozen or prepared meats and prepare for presentation
Prepare special sausages as required
Grind meat
Manage inventory, determine amount, product line and freshness of products according to company and customer requirements
Prepare broths, rendered fats and cooked ready to eat items,
Smoking sausages, hams bacons and other meats
Cut carcases, sides and quarters
Assist customers with their meat selections, providing knowledgeable recommendations
Maintain cleanliness and organization in the butcher area and kitchen.
Adhere to Hazard Analysis and Critical Control Points (HACCP), Canadian Food Inspection Agency (CFIA) and food safety standards
Ensure food storage conditions are following food safety regulations
May supervise, or transfer skill to direct work or train other butchers, or meat cutters

Job Requirements:

Strong communication written and spoken
Collaborate with team members to ensure efficient operations within the food industry
Punctual
Ability to use cutting and smoking machinery safely and keep clean
Excellent knife skills
Can stand for long periods of time
Able to lift 50 lbs or more
Food safe handling certificate is an asset but will provide
Not afraid to get messy
Willing to work weekends and early mornings as required
