Kitchen Manager

Job Description:

Complete and coordinate schedules on a weekly basis, ensuring the kitchen is staffed and labour is kept within budget to optimize profitability
Prepare meals and train staff as per order to ensure consistency
Assist with preparation of food orders to meet dietary concerns as required
Ensure we have enough staff employed to fill the shifts available for the kitchen
Complete inventory orders before cut-off times and order only what is needed and used in recipes and dishes
Create a par level based on sales history to prevent over/under ordering to control inventory levels properly
Keep a kitchen log book that is completed daily
Ensure the environment is clean and safe for team members to work in
Enforce company policies and procedures, including keeping recipes up to date and ensuring they are followed by the team
Report any kitchen maintenance issues to upper management
Create/update prepsheets, open/close sheets, defrost sheets, and cleaning sheets
Coach and support assistant kitchen manager and team
Complete a monthly inventory count and receive orders through company software
Record wastage and try to reduce as much as possible
Complete a weekly safety inspection, ensuring all equipment is safe and clean for use as well as ensure all kitchen staff are following proper procedures
Ensure we have an adequate amount of chemicals and first aid supplies
Ensure all food is stored and labeled correctly
Ensure the team is trained on equipment and aware of specs of dishes
Work closely with the GM to ensure the smooth running of the shifts
Be approachable and have a positive attitude toward the team and business
Complete daily cleaning checks and inform the team of areas of concern
Hold monthly one-to-one meetings with the kitchen team
Schedule meetings with GM to go over sales and any issues within the location
Report any HR issues to upper management
Discipline team with write-ups to a maximum of 3, then report to upper management
Lead by example, be a leader not a boss
Ensure company uniform policy is followed

Job Requirements:

Must be able to lift up to 50 pounds
Stand, walk, and bend for extended periods of time
